The Magical 3-Ingredient Icebox Cake
This cake is the definition of old-fashioned simplicity! It was the star of picnics and potlucks from the 1930s through the 1960s, requiring no oven and turning simple cookies and cream into a delicious, soft "cake" overnight. It’s light, creamy, and easy to share!
Prep Time: 15 minutes
Chill Time: 4 hours (or overnight for the best results!)
Servings: 6-8
Ingredients
1 (8-9 ounce) package of Chocolate Wafer Cookies (Nabisco Famous Wafers are the classic choice, but any crisp chocolate wafer will work!)
2 cups of Heavy Whipping Cream
1/4 cup of Granulated Sugar (or use a sugar substitute if preferred)
Optional for a retro touch: 1 teaspoon of Vanilla Extract
Easy Instructions
Whip the Cream: In a large bowl, combine the heavy whipping cream, sugar, and vanilla (if using). Use an electric mixer (or a whisk and some elbow grease!) to whip the cream until stiff peaks form. The cream should be thick enough to hold its shape.
Assemble the "Cake": Lay a piece of plastic wrap inside a standard loaf pan, letting the sides hang over (this makes lifting the cake out later easy).
Layer & Spread:
Start by spreading a thin layer of the whipped cream on the bottom of the pan.
Stand 5-6 chocolate wafers on their side in a row on top of the cream, pressing them together gently.
Completely cover the row of wafers with a generous layer of whipped cream, ensuring the cream gets into all the gaps.
Repeat the process, adding another row of wafers and another layer of cream, until you run out of cookies or reach the end of the pan.
Cover & Chill: Cover the pan tightly with the hanging plastic wrap. Place the cake in the refrigerator for at least 4 hours, but overnight is best. This is the magic step! The wafers slowly absorb moisture from the cream and soften, transforming from crunchy cookies into a cake-like texture.
Serve: When ready to serve, lift the cake out of the pan using the plastic wrap. Slice it diagonally for a beautiful striped presentation and share a slice of creamy nostalgia!
A Tip: For extra fun, skip the loaf pan and stack the wafers flat on a plate with cream between each one tocreate a log shape. Then, coat the entire log with the remaining cream!
